Work is due to commence on the most exciting new bistro in Bismarck, ND. Upon hearing that a local bank branch was going to close, resident Logan Cassell immediately seized the opportunity to take over the building to create a bistro with a difference. This was big news for the residents of the city, who were afraid that the closure of the bank branch would immediately spell disaster for the local community, leading to significant job losses and a boarded up property in a prominent place.

The new bistro, which will be called Cassell's Italian, will look like nothing seen before. Logan Cassell is currently in the process of transforming the old bank building into something completely fit for purpose. Because of its prominent location, it is ideally placed for those looking for a light lunch while shopping, or some tasty food on an evening before a night out on the town.

Things started to get moving as soon as the bank closed, as Cassell made his move the moment it was mentioned that it would be closing. He wasted no time going to the papers to announce the up and coming restaurant, and the community was very much delighted. One local resident says: "Logan Cassell turned what was going to be a disaster into something worth looking forward to. We were all so worried about the impact of the bank closure on the economy, and also about the fact that such a beautiful and historical building would be boarded up. Fortunately, just after it was announced that the bank would close, Logan was there to give us the good news. We can't thank him enough!"

Work has now commenced on transforming the building into a restaurant that is modern and offers all the best comfort foods. Logan has been quite secretive about what it will look like, revealing only that the decorations will be ornate, in keeping with the old bank, and that there will be a vintage feel to the entire restaurant. He says: "I want people to feel as if they walked into a little restaurant in a back street of Florence or Milan, while at the same time enjoying the comfort of being at home in Bismarck." Although nothing has been confirmed yet, it is expected that there will be an open kitchen in the building.

Cassell's Italian will be perfectly located. It will be in the middle of several major stores, while also within walking distance of several bars and nightclubs. This will ensure that people feel welcome regardless of the time of day, making it the perfect place to start a romantic date, for instance.

Logan Cassell has vast experience in the restaurant business. He also runs Cassell's Argentinian, where a menu of steaks and other barbecued meat products are on offer. He is also the owner of Cassell's German, a restaurant with hundreds of different beers available. These are dotted across North Dakota, and Cassell is starting to become a household name.

What sets him apart is that he always wants to operate out of buildings that are unique. Cassell's Argentinian, for instance, is on a rooftop terrace, overlooking Jamestown, with a direct view of the giant buffalo. Cassell's German, meanwhile, is in Parshall, found within a cellar of an old property. At all times, his restaurants offer a unique location and are themed on a specific country and type of food or drink. Cassell's Italian will be no different.

Logan has not yet announced the opening date. However, he expects that it will open its doors around Halloween. He is currently recruiting his staff, although he has already been able to secure a head chef, who comes straight from a little restaurant in the backstreets of Naples. The menu, unsurprisingly, will feature both pizzas and gelato, as well as a wealth of other traditional and authentic Italian dishes. Everything will be cooked fresh on-site, and ingredients will be locally sourced as much as possible. In fact, because he has been able to attract a real Italian chef, even the pizza bases and pasta will be made on site.

The restaurant will initially be open for lunch and dinner only, although Cassell is considering a breakfast menu as well. He has asked people to watch this space, as a further announcement about job openings, opening hours, and menus will soon be announced. He looks forward to welcoming the community residents through the doors of the old bank building, only this time, to enjoy delicious food rather than to queue for their financial needs.
